The Preparation of our Seafood Paella consists of 3 different very simple cooked dishes.
Next, we indicate the necessary ingredients that we will later break down in each of the cooked ones. You also have a full video with the cooking of the seafood paella.
INGREDIENTS FOR A PAELLA OF 4/6 PEOPLE:
- 500g Chopped Tomato
- 400g Short-grain Albufera rice
- Extra Virgin Olive Oil
- 1 Medium Onion
- Salt
- Strands of Saffron
- 1/2 tsp Pimentón or Paprika (optional)
- 1 Bulb of Garlic
- 3 or 4 Smoked Dried Ñora Peppers
- 100g Parsley
- 1 Fresh Tomato
- 1 Carrot
- 1 Leek
- Whitebait
- Monkfish Head or Carcass
- 6 Red Prawns
- 250g Langoustines
- 4 Norwegian Lobsters
- 250g Squid Rings
- 250g Small Shrimp
- 8 Mussels
The First Cooking: The Typical Valencian Salmorreta
Salmorreta is a typical Alicante sauce, it is used in many recipes but especially as a base in almost all Levantine paellas and rice dishes as it provides a characteristic touch of flavor and color in stews.
The quantity of the ingredients is variable, thus being able to enhance each person’s favorite flavor.
In Paella Market we recommend the quantities that we indicate below with which, in our opinion, a good balance is achieved for a delicious paella.
SALMORRETA INGREDIENTS:
- 50ml Extra Virgin Olive Oil
- 500ml Chopped or Fried Tomato
- 3 or 4 Smoked Dried Ñora Peppers
- 5 Cloves Garlic
- 1 Bunch of Fresh Parsley (100g)
- Preparation
- 1. First, cover the base of a frying pan with virgin olive oil and wait for it to heat up.
- 2. Next, add the Smoked Dried Peppers, after chopping them up and removing the seeds, and allow to simmer for a minute on a medium heat.
- 3. Add in the garlic cloves, peeled and halved, and let them go slightly golden.
- 4. Add in the parsley, stir the mixture a couple of times and then add in the chopped tomatoes.
- 5. Mix it all together, add salt to taste and simmer slowly.
- 6. Remove the mixture from the heat and pour into a food processor.
- 7. Blend until you get a smooth mixture.
- 8. Set aside...
Second cooked dish: Fish and Seafood Fumet
It is a Fumet made with vegetables, fish, and seafood with which we will enhance the flavor of our paella.
FISH FUMET INGREDIENTS:
- 1 Onion
- 1 Tomato
- 2 Smoked Dried Ñora Peppers
- 5 Cloves Garlic
- 1 Carrot
- 5 Red Prawns Heads
- 100g Langoustines
- 100g Small Shrimp
- 2 or 3 Pieces of Fish Whitebait
- 1 Monkfish Bone or Head (or similar fish)
- Preparation
- 1. First, cover the base of a large saucepan with virgin olive oil and allow to heat up over a medium heat.
- 2. Add the chopped garlic, simmer slightly and add chopped Smoked Dried Peppers. Sear for a few seconds.
- 3. Immediately turn the heat down low and add a few strands of saffron. Allow to brown slightly and add the onion. Cook slowly for a few minutes, and add the leek.
- 4. Stir and pour in the chopped tomatoes. Simmer over a low heat until soft, and add the carrot.
- 5. Cook over a low heat, and begin adding the red prawn heads. Squash them a little with the ladle so that they release their juices.
- 6. Next, add the langoustines and prawns.
- 7. Cook everything for a few minutes, and add four litres of water.
- 8. Bring to the boil and cook over a medium heat for five minutes, skimming off any foam as it appears.
- 9. Next, add the whitebait and monkfish bones. Add salt to taste and a little food colouring, and allow to boil for 25 minutes.
- 10. Finally, sieve the stock and set aside.
Our delicious fish and seafood stock (Fumet) is ready!
Preparation of the Seafood Paella
Once we have the Salmorreta and the Fumet ready, we proceed to the preparation of the seafood paella.
INGREDIENTS:
- 1.5L Fumet Fish Stock
- 1 tbsp of Salmorreta per person
- 50ml Extra Virgin Olive Oil
- 5 Red Prawn Tails (peeled)
- 100g Small Shrimp Tails (peeled)
- 150g Langoustines Tails (peeled)
- 250g Squid Rings
- 6 Whole King Prawns
- 4 or 5 Whole Red Prawns
- 4 Whole Norwegian lobsters
- 8 Mussels
- Preparation
- 4. Next, sear the whole king prawns, adding salt, garlic and chopped parsley.
- 5. Sear the whole red prawns in the same way, and next the Norwegian lobster.
- 6. Finally, cook the mussels until they open, and set aside.
- 7. Add in the chopped squid rings. Add salt to taste, along with garlic and chopped parsley. Simmer for a few minutes until the squid has released all its water.
- 8. Lower the heat, and add a pinch of La Vera pimentón.
- 9. Stir gently and add in the Salmorreta: 1 tbsp per person
- 10. Mix well and add the rice: 100g per person
- 11. Cook for a few minutes until the mixture thickens, and add the red prawn, langoustine and shrimp tails.
- 12. Next, add the fish stock: 1.5 litres for four people.
- 13. Allow to cook for 8 minutes over a high heat.
- 14. After 8 minutes, decorate with the previously-seared Norwegian lobsters, king prawns, red prawns and mussels.
- 15.Bring to the boil and allow to simmer for 8 more minutes over a low heat.
- 16. After 8 minutes, turn the heat up very high and cook for two more minutes.
- 17. Finally, remove from the heat, allow to rest for a few minutes…and voila!!
