The Ñora is a small round pepper with an intense flavor and sweetmeat that is used to flavor stews, broths, or soups. It can also be used to make creams or sauces such as Salmorreta Paella. And of course, an essential ingredient in Spanish Paella.
The Ñora provides a wonderful earthy flavor, something sweet without being spicy. Ideal to fill your dishes with flavor and color.
Preparation
Hydrated
Remove the stems and seeds and soak for 3 hours. Then scrape the flesh and discard the skin.
Dry
Another option is to make chopped Ñoras. Remove the stems and seeds and mash the Ñora well to use it in the vegetable sauce “sofrito”.
