- 8 Shrimps
- 1 Garlic
- 350g of baby Squid
- 1 Tablespoon of sweet Paprika
- 1 Pear tomato
- 1 Glass of white wine
- 2 bay leaves
- 800ml of Fish Stock
- Salt to taste
- Saffron (in threads)
- 200g of rice (You can use Bomba, Redondo or Marisma)

Preparation of the Mellow Rice
While the broth is cooking, we can start the recipe.

These are the steps to follow to make the mellow rice with baby squid and shrimp:
- 1. Clean the baby squids removing all the inner intestine and the feather (its small transparent skeleton) and wash with plenty of water.
- 2. Peel the shrimps remove the intestine and reserve the heads.
- 3. Add a splash of extra olive oil in a deep frying pan and fry the shrimp heads, squeezing them a little so that they release all their juices.
- 4. Then add the chopped garlic, the chopped onion, and a little salt to release all the juices. And poach everything slowly for a few minutes over low heat.
- 5. Then add the baby squids, the sweet Paprika and the grated tomato, a couple of bay leaves, and a glass of white wine, and let it reduce completely.
- 6. Then add 800ml of fish stock and when it starts to boil add salt to taste, saffron, and rice bomb.
- 7. We will have it cooked for 16 minutes, the first 5 minutes over high heat and the rest over low heat, chup chup.
- 8. We stir subtly so that the rice releases the starch.
- 9. Add the shrimp tails in the last 5 minutes of cooking and stir gently.
Once finished, we rest for a few minutes, and voila!
