We present you a very tasty recipe made with Bomba Rice, Spider Crab and Cuttlefish, a creamy and honeyed rice with which you will lick your fingers.

INGREDIENTS FOR 4/6 PEOPLE:
- 240g Bomba rice
- 20cl Extra Virgin Olive Oil
- 4 tsp Chopped Tomato
- 2 Smoked Dried Ñora Peppers
- 1 Large Onion
- Strands of Saffron
- 1/2 tsp Sweet Pimentón
- Salt
- 1 Spider Crab
- 8 Red Prawns
- 400g Squid Rings or Cuttlefish
- 850g Fish Broth
Preparation of the Seafood Stew with Spider Crab
For this recipe, it is very important to make a fish broth that has a lot of flavor, so we will have to include fish and seafood rich in flavor.
You can include, conger eel, monkfish bone, grouper, small shrimp, etc.
Also to enhance the flavor we will add 1 or 2 chicken broth tablets and a jet of Saffron infusion.
Boil for 20 minutes removing the white foam that comes out.
IMPORTANT
The broth must be hot and ready for the recipe, DO NOT chill it.
While the broth is cooking, we can start the recipe.
Preparation of Creamy Rice
These are the steps to follow to make the seafood stew with Bomba rice:
- Preparation
- 1. First, we prepare the spider crab, open the shellfish, clean and cut the body into 4 parts, set aside.
- 2. Next, we put a frying pan or saucepan where we will prepare everything, add a splash of oil and fry the chopped spider crab so that it releases all its flavor. With 1 minute is enough, then we remove and set aside.
- 3. Add the onion and then add the Ñoras (1 or 2 pieces) and fry.
- 4. Then we add the pieces of squid rings, and fry a little more.
- 5. Add a tablespoon of sweet Pimentón and then 4 tablespoons of tomato.
- 6. Next, we add a few strands of Saffron, toast them a little and stir with the sauce.
- 7. It is time to add the Bomba rice, approximately 60g per person, and stir. The proportion is a little lower than with dry rice or Paellas, in this way it will be soupy and honeyed.
- 8. Next we will add the broth, it must be hot, otherwise the rice will not cook as it should.
- 9. We will cook over high heat for 10 minutes adding the spider crab to the pan, we will also add a jet of Saffron infusion and salt to taste.
- 10. After 10 minutes of cooking, lower the heat and cook another 5 minutes over low heat, add a little chopped parsley to enhance the color, and add the red prawn.
- 11. Finally we let it rest for 5 minutes.
And we will have ready a spectacular creamy rice with seafood stew.
